F&T provided full MEP/FP services for the first-ever Japan-led sake brewery in the US, located in Hyde Park, NY for the world-renowned Asahi Shuzo, which makes the Japanese sake brand Dassai. The project consisted of converting an existing 55,000 SF grocery store to a state-of -the-art brewery that includes back of the house process, environmental rooms, and a large tasting/shop area. Additionally, a separate rice polishing building was constructed on the site.
Each room contains a very specific process/environmental needs for proper polishing, steaming, washing and fermentation. F&T worked closely with Pelli Clarke & Partners Architects, Consigli Construction, and the brewery team in Japan to ensure all infrastructure and environmental needs were met for the brewing process.
